Spicy Seafood Salad

Ingredients

450 grams (one pound) sea scallops

450 grams (one pound) cooked peeled prawns

112 grams (4 ounces) snow peas

3 stalks celery finely chopped

1 red capsicum julienned

6 spring onions

Special dressing (GF* DF, NF, V):

1 garlic clove minced

4 tablespoons vinegar (apple cider balsamic, or white-wine)

2 tablespoons cold-pressed virgin olive oil

1 tablespoon cold-pressed sesame oil

1 tablespoon dry mustard powder

4 tablespoons soy sauce (or gluten free soy sauce*)

1 pinch chilli powder (if desired)

Description

This salad is nice with cold rice.

Directions

Poach the scallops in boiling water for 2 minutes and remove with a slotted spoon, set aside to cool.

Steam snow peas for 2 minutes then plunge into iced water for 30–40 seconds to stop overcooking. Drain snow peas.

Mix all the ingredients in a bowl and toss with special dressing.

Special dressing: Combine all ingredients for the dressing in a screw top jar and shake vigorously.
